Roasted Asparagus

Preheat your oven to 450.
Get your asparagus ready - trim the ends, peel if they're fat - and lay them on a roasting pan. Drizzle them with some extra-virgin olive oil and sprinkle a bit of salt on top. Now roast them for 10 to 15 minutes.
Serve with lemon wedges.

Also good with a little cumin. And charred on the grill? Heaven.

This is my favorite way to cook asparagus. I'm really into roasting veggies lately. Cauliflower is amazing roasted!

I TRY to like asparagus. My mom roasts it and does the vinaigrette thing too. I try it--and I'm all, "Nope. Still don't like it." Maybe it will be like I tell my kids, and I'll like it when I'm older.

I'm ashamed to admit this but...I have actually never had asparagus. It's the look of it -- scary. Plus I find restaurants usually serve it steamed, so it arrives limp and flourescent green like the fingers of dead aliens. Eeek.

However! Inspired by this post I went out and bought some asparagus on the weekend and roasted it this evening as per your instructions. And...happy ending! I had to kind of force myself to try it, but once I did, I could not get enough. I made the whole bundle, but of course, no one else in the family would even try it...so I ate it ALL myself.

I may have some digestive regrets in the morning. But man, was it ever tasty.
