Some useful advice and a recipe from the Girl

This is the Girl's very own advice for sneaking some higher food value baby spinach into your kid's sandwich - hide the spinach between the lettuce. Of course, all three of my children adore spinach, but that's just because they're weird little mites.

Here's The Girl's Sub recipe that she wanted me to share:
- one whole wheat hamburger or hot dog bun
- one slice of pickle
- a few slices of cucumber
- baby spinach leaves
- a few circles of red onion
- some sub sauce or Italian dressing.

Her favorite!

I have been using a lot of puree spinach in sauces these days. I agree with The Girl you can't have too much spinach!

That sounds delicious. I eat the same thing on a whole wheat wrap with hummus and feta cheese and it is TO DIE FOR!!! Follow up with a cookie or cupcake and you have a well rounded vegetarian lunch. Mmmmmm.

I mix spinach leaves in with the lettuce in our salads and no one ever knows. I just smile inside because they are eating healthy and they don't know it.

Oooh--I DO wish my kids ate like yours. Or, at least, I wish ONE of my children (you know who) ate like yours--that fresh sub sounds so yummy and healthy.

Excellent choices for sub toppings! My kids eat their subs this way, too (sometimes adding black olives).

Sounds like a really good recipe although I will be leaving off the pickle.....I just don't care for them.

My son is AWFUL when it comes to eating veggies! His food allergies don't make it any easier, since I can't smother things in a cheese sauce. How did you cultivate an appreciation of veggies in your kids? The only things J will sometimes eat are peas, cooked carrots, lettuce, green beans, broccoli, and corn. That's sometimes. Not willingly, but only after some threats! Any suggestions??
