The Best Raspberry Yogurt Muffins in The World

I used to go to a coffee shop every day when The Girl was a baby and I would get one of these muffins. They were SO good.
Then we moved and I missed my delicious muffins, until one day I magically figured out the recipe and lived happily ever after.

2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1 cup raspberry yogurt (which I make by mixing raspberry jam and yogurt together, but whatever)
1/2 cup butter, melted
1 tsp vanilla extract
Rasberry jam
Combine the flour, sugar, baking powder and salt in a large bowl.
In another bowl, whisk the egg, yogurt, vanilla and butter; stir into the dry ingredients.
Fill each muffin tin with a tablespoon or two of batter - then put 1/2 tablespoon of jam in each cup; cover with batter. Bake in a 350 degree oven for 30-35 minutes.Yum.

I tried this a while back and it was really good and really easy. Made me feel like I could really bake!

the flavour of these is sooooo good.
i must be a chronic mixer because mine came out tough :[
is the batter deceptive? when i tried to fold it all together (as to not overmix) it seemed way too thick so i added a touch more yogurt to try combine it but it just threw it right off...
is the batter supposed to be super thick?
they tasted sooooooo good and i want to make them right the next time. haha.

Don't overmix muffins - just stir until the batter barely comes together! And adding more liquid makes batters tough. The More You Know. I had to make a ton of muffins before I figured them out, too.

ok thanks for that info...i can cook like the wind but when it comes to baking, im a total newbie! i will try again..even though they were tough, they didnt last more than a day in my house so obviously the taste is an A...execution was a fail.

No, but I imagine the muffins might be similar. How many recipes for Raspberry Yogurt Coffee shop muffins can their be?
